In most parts of Southeast Asia you also find variations of congee rice porridge served as a breakfast staple. In Thailand the most popular rice porridge is jok (pronounced joke), which has a thick and fine consistency. Minced pork balls and chicken are commonly the meats of choice for jok. An egg is added and the final dish which is then garnished with ground chilli powder, coriander, and shaved ginger to taste.

The exact origins of jok and other regional rice porridges are unclear, although rice porridge has been documented back to 1000BC and the Chinese Zhou dynasty.
